Recipe Green Tofu Tikka Kebab

 

Ingredients

Kebabs 
1. Firm Tofu: 1 Pound

Marinate
1. Onions Chopped: 1/2 Cup
2. Garlic: 4 Cloves
3. Ginger Chopped: 1 Inch
4. Fresh chopped cilantro: 1/4 Cup
5. Fresh peppermint chopped: 1/4 cup
6. Cayenne Pepper: 1/2 teaspoon
7. Salt: ½ teaspoon
8. Fat free Yogurt: 1 cup
9. Lime Juice: 1/4 cup
10. Olive oil: 1/4 cup

Method

Step 1: Prepare Tofu For this recipe you need harder Tofu. To harden Tofu, freeze Tofu over night. Defrost Tofu in the refrigerator over night. Cut the blocks of Tofu into ½" thick, 1"x1" pieces. Lay down about four paper towels to absorb water. Spread out Tofu cubes on the paper towel. Cover the cubes with another layer of about four paper towels. Put a cutting board on top. Now, place a weight on the cutting board. I use a half filled milk gallon jug. Wait about 30 minutes to an hour. Remove weight, cutting board and paper towels. The Tofu is ready to be marinated.
Step 1: Marinate/Dip
Add all items and puree them in a blender or a food processor. Add Tofu to marinate. Marinate at room temperature for 45 minutes or two hours in refrigerator.
Step 3: Remove Tofu from marinate. Don't discard marinate. You can use this marinate as a Chutney or a Dip with these Kebabs. Thread Tofu on Skewers. If refrigerated, let Tofu rest till it comes to room temperature.
Step 4: Line a baking pan with Aluminum foil shiny side up. Put skewers in the pan. Baste generously with the marinate. Pre-heat oven to 450º F. Bake for about 10 minutes. Turn over the skewers. Baste again with the marinate. Bake another 10 minutes or till done.
