Recipe Spinach Salad

 

Nutrition aspects

This is a mother of all salads for Indian Vegetarian diet. The vegetables are not cooked, preserving all the vitamins. Tofu, or Paneer is added to enhance proteins.

 

Ingredients

1. Fresh Spinach leaves: 1 cup
2. Carrot: 1 medium
3. Fresh Tomato: 1 medium
4. Fresh Broccoli floweret: ½ cup
5. Fresh cauliflower floweret: ½ cup
6. Apple: ½ cup
7. Slivered Almonds: ½ Tablespoon
8. Firm Tofu (cubed ½"): ¼ cup (optional),  or low fat Paneer (cubed ½"): ¼ cup (optional)
Dressing ingredients
1. Fresh lemon juice: 2 teaspoon
2. Extra virgin olive oil: 1 teaspoon
3. Mustard oil: 1 teaspoon
3. Ground mustard powder: ¼ teaspoon
4. Ground ginger powder: ¼ teaspoon
5. Salt: ¼ teaspoon
6. Ground Cayenne pepper: Pinch

 

Method

Step 1: Sanitize Vegetables and Fruits.
Step 2: Prepare Vegetables/Apples. Skin and shred carrots. Shred it. Cut apple, remove core, leave the skin-on, cut into small cubes or slices. Cut tomato into slices or small cubes.
Step 3: Dressing
In a separate bowl, mix all ingredients and whisk well.
Step 4: Assembly
Put all vegetable, apple, and Tofu in a large bowl. Pour the dressing on top. Toss to cover all ingredients with the dressing. Serve cold.
