Brown Rice Cake Healthy Recipe

This makes a good nutritional snack for children.

 

Ingredients

Rice Mixture

1. Puffed brown rice: 6 cups
2. Slivered sliced almonds: ¾ cup
3. Chopped dried fruits (Choice one or more dried fruits such as Raisins, Apricots, Figs, Cherries):1 Cup

Liquid Mixture

1. Flax seed oil: 3 Tablespoons
2. Honey: 1 Tablespoon
3. Mini marshmallows: 4 cups

 

Method

Step 1: Rice Mixture

Pre heat oven to 425º F. In a non stick cookie pan, mix puffed rice and
almonds. Bake 4 minutes.
Step 2: When toasting is complete, mix in dried fruits.

Step 3: Liquid mixture

In a glass bowl mix marshmallows, honey and oil. Microwave at hi for 90 seconds. Mix well. If needed microwave again for about 30 seconds.
Step 3: As soon as the marshmallows are melted, pour Liquid mixture over rice mixture. Wet your hands and combine all together and press down evenly in the pan. You can also use spatula.
Step 4: When cool, with a sharp knife cut it into squares.
