Brown Rice Cake Healthy Recipe

Made with puffed brown rice, almonds, flaxseed oil, honey, marshmallows, dried fruits

 

Ingredients

Dry Mix

1. Puffed brown rice: 6 cups
2. Slivered sliced almonds: ¾ cup
3. Chopped dried fruits (Choice one or more dried fruits such as Raisins, Apricots, Figs, Cherries):1 Cup

Wet Mixture

1. Flax seed oil: 3 Tablespoons
2. Honey: 1 Tablespoon
3. Mini marshmallows: 4 cups

 

Method

Step 1: Dry Mix

Pre heat oven to 425º F. In a non stick cookie pan, mix puffed rice and
almonds. Bake 4 minutes.
When toasting is complete, mix in dried fruits.

Step 2: Wet mixture

In a glass bowl mix marshmallows, honey and oil. Microwave at hi for 90 seconds. Mix well. If needed microwave again for about 30 seconds.

Step 3: Set and Cut

As soon as the marshmallows are melted, pour Wet mixture over Dry Mix. Wet your hands and combine all together and press down evenly in the pan. You can also use spatula.

When cool, with a sharp knife cut it into squares.
