What is Poaching, Simmering?

 

Poaching is cooking an item in a fluid at low temperatures. For stove top cooking, the item is placed in a covered pot with a minimum amount of fluid and cooked at a temperature between 194 to 201°F. For oven cooking, the item is placed in a covered pan with fluid and baked at a temperature between  320 to 360°F.
For simmering the fluid temperature is maintained just below boiling, 203 to 210 °F.
