Spicy Nachos Fusion Recipe

The Nachos are made with Indian flat bread (Roti)

 

Ingredients

Roti

1. Whole wheat flour: 1 cup
2. All purpose flour: 1 cup
3. Salt: 1 teaspoon
4. Coarsely Ground Black Pepper: 1 teaspoon
5. Crushed Red Pepper: 1 teaspoon
6. Lemon juice: ½ teaspoon
7. Warm Water: ¾ Cup

Nachos Ingredient

1. Olive oil: ½ cup
2. Poppy seeds: 1 teaspoon
3. Grated Parmesan Cheese: ½ cup

 

Method

Step 1: Mix dry ingredients to make Roti (Flat Indian bread). Add water and knead well. Gather dough in a ball, wrap it in Saran wrap. Let it rest for 30 minutes. Heat a flat heavy griddle (Tawa). Make a ball about the size of a golf ball (1½" diameter). Roll it in to a 7" diameter flat round pancake. Transfer to the griddle. Cook each side about 1 minute. You do NOT want the Roti to puff with steam.
Step 2: Pre-heat convention oven to 350º F.
Step 3: Brush olive oil lightly on one surface of each Roti. Take a sharp knife and cut into 8 segments (like a pie). Put these segments (Nachos) on a cookie sheet. Bake for 10 minutes.
Step 4: Remove the Cookie sheet. Sprinkle Poppy seeds and Grated Parmesan Cheese. over Nachos. Return the cookie sheet to the oven for another 5 minute.
Step 5: Remove from the oven and let cool.
Serve with Salsa, Sweet n Spicy mint dip or Garbanzo bean spread.
