Mathari Sticks Fusion Recipe

Mathari is like a salty cookie that is deep fried and eaten with spicy Indian pickles

We will make two major changes, the shape will be like a stick so you can use dip to it. Secondly, we will bake it and NOT deep fry it. The spices are changed, still giving the same flavor.


Ingredients

1. Pastry Flour: 2  Cups 
2. Corn meal: ¼ Cup
3. Salt: ½ teaspoon
4. Black Pepper Coarsely ground: ½ teaspoon
5. Oregano leaves dried: ½ teaspoon
6. Parsley leaves dried: ½ teaspoon
7. Vegetable Shortening: 2 Tablespoons
8. Cold water: 5 Tablespoons

 

Method

Step 1: Mix dry items 1 through 6 well.
Step 2: Cut in shortening into mixture till it is like small crumbles.
Step 3: Add one tablespoon at a time and knead. It will result in a hard dough. Gather dough and wrap it in Saran wrap. Let it rest about 1 hour.
Step 4: Pre heat oven to 425º F
Step 5: Roll dough out to about 1/8" thick (about 3 pennies stacked). Cut ½" wide strips. You want to make about 5" long, ½" wide, 1/8" thick strips.
Step 6: Prepare a cookie pan. If it is not non-stick, lightly grease it. Put the strips in the pan, leaving about ½" between the strip. Bake 10 minutes. If Not golden brown, bake another three minutes. Remove from stove. Serve them warm or cold. For a dip, you can even serve spaghetti sauce or Basil Chutney.
