Chenna (Cheese) Cookies Fusion RecipeIn India, many desserts are made with Chenna , including the most famous of them, Rasgulla. In this recipe, you can use Chenna, Cottage cheese, or crumbled up Paneer. Ingredients1. Maida (All Purpose Flour): 4 Cups 2. Baking Soda: 1 teaspoon 3. Baking Powder (Double Action): 1 teaspoon 4. Melted Butter: 1 Cup 5. Sugar: 2 Cups 7. Chenna: 1 Pound 8. Pistachios Crushed: ½ Cup 9. Cardamom seeds: 2 teaspoons Method1. Mix Maida, baking powder, and baking soda. Sift. Set aside. 1. In a bowl, mix butter and sugar with a mixer at low speed. Increase to high speed for five minutes till fluffy. Reduce speed to medium and add eggs and Chenna. 3. Add the flours, mix at low speed or with a spatula to form cookie dough. 4. Add Pistachios and Cardamom seeds to the cookie dough. Mix in well. 5. Grease a baking sheet. Drop dough (one level Tablespoon) about every two inches. 6. Preheat oven to 350º F. Bake cookies for 8 to 10 minutes. Let cookies cool off for 5 minutes. Remove cookies with a turner. |
