Carrot Halwa Cake Fusion Recipe

This is based on traditional recipe called Gajar Halwa

Carrot Halwa recipe .

 

Ingredients

1. I will pre-cook the carrots in a microwave oven. If you don't have a microwave oven Cook carrots in 2½ cups of milk till tender.

2. Normally, Daan-e-daar (Granular) Khoya is used. This Khoya is not readily available in United States. One may use various emulations. For this recipe, I will use Ricotta Cheese. If you have Daan-e-daar (Granular) Khoya, use ½ Cup Khoya.

1. All purpose flour: 2½ Cups

2. Grated Carrots: 3 Cups packed

3. Baking powder (Double Action): 1 teaspoon

4. Baking soda: 1 teaspoon

5. Salt: ½ teaspoon

6. Cardamom seeds: 1 teaspoon

7. Sugar: 1½ cup

9. Eggs: 3

10. Whole milk: ½ Cup

11. Heavy whipping cream: ¼ Cup

12. Butter un-salted: ¾ Cup (1½ Stick)

13. Sliced Toasted Almonds: ½ Cup

14. Split Toasted Cashews: ¼ Cup

 

Method

1. Mix flour, salt, baking powder, baking soda. Toss in carrots till carrots are evenly covered with flour. Set aside.

2. In a bowl, mix white sugar and butter till creamed about five minutes. Add eggs, cream and milk. Mix well till frothy about 2 minutes. Pour over carrot flour. Mix well with a spatula. Mix Cardamom seeds, Almonds and Cashews. Put the mixture in a greased 9x9 pan

3. Pre heat oven to 350º F. Bake the mixture for 45 minutes.

4. Reduce oven temperature to 325º F. Bake 20 minutes. The internal temperature should be above 205º F.

5. Remove the pan. Let it come to a room temperature. Move it to Refrigerator for about 1 hour before cutting it into squares.
