Almond Peda Fusion Recipe

 

This is more of a candy than a dessert. Its rich. Needs to be stored in the refrigerator. While Peda is made from reduced milk, this recipe does not use milk at all. I have roasted the Almonds. You may choose to omit Step 1 and make it with raw Almonds.

 

Ingredients

1. Almonds (slivered and sliced): 2 cups
2. Cardamom seeds: ½ teaspoon
3. Canola oil: 4 Tablespoons
4. Unsalted butter: 1 stick
5. Confectioner's sugar: 1 pound (About 3 ½ cups)

 

Method

Step 1: Preheat oven to 350º F. In a cookie sheet, spread out the almonds. Roast almonds in pre-heated oven for 20 minutes. Let the almonds cool off to room temperature.
Step 2: In a food processor, add almonds, cardamom seeds and Canola oil. Purees to paste.
Step 3: Cut butter in to ¼" patties. Add butter to the almond paste in the processor, about 6 pieces at a time, and process.
Step 4: Add confectioners sugar ½ cup at a time, and process. The paste will get thick like the consistency of dough. If you have problem in this step with the food processor, use spatula to mix the sugar.
Step 5: Take 2 Tables spoons of the mixture out. Form it into a ball, and press it slightly flat. Put these Peda on a cool cookie sheet. Put the cookie sheet in the refrigerator, If you wish, you
may freeze them.
