Vindaloo BBQ Sauce Fusion Recipe

This recipe is based on Vindaloo Curry sauce. It is very spicy and moderately hot.

 

Ingredients

1. Olive oil: ¼ Cup
2. Onion Pureed: 2 Large
3. Minced Garlic: 1 Tablespoon
4. Cumin Powder: 2 Tablespoon
5. Coriander Powder: 2 Tablespoon
6. Ground Ginger: 1 Tablespoon
7. Ground Cinnamon: 1 teaspoon
8. Ground Cloves: ½ teaspoon
9. Ground Nutmeg: ½ teaspoon
10. Cayenne Pepper powdered: 2 Tablespoons
11. Ground Black Pepper: 1 Tablespoon

12. Turmeric Powder: ½ teaspoon
13. Tomato Puree: 2 Cups
14. Salt: 1 Tablespoon + 1 teaspoon
15. Lemon Juice: 1 Tablespoon + 1 teaspoon
16. Brown Sugar: 1 Tablespoon
17. Dry Hot Mustard Powder: 1 Tablespoon
18. Wine Vinegar: ½ Cup

 

Method

1. Heat a heavy bottom pan to a medium. Add Olive oil. Add one cup of well pureed/blended onion. Cook till almost all the water is gone.
2. Add ingredients 3 through 11. On low to medium heat cook for two minutes. You are basically dry roasting spices to release their flavors and combing them.
3. Add water and cook for 5 minutes forming a paste.
4. Stir in the remaining ingredients. Simmer on low to medium heat for 20 minutes.
