Eggplant Spread Fusion Recipe

 

This recipe is based on North Indian dish called Baigan Bharta . You may call it poor man's caviar.


Ingredients

1. Eggplant: 1 Large
2. Olive oil: 2 Tablespoons
3. Chopped Red Onions: 1 cup
4. Chopped Tomatoes: ½ cup
5. Minced Garlic: 1 Tablespoon
6. Cumin powder: 1 teaspoon
7. Coriander powder: 1 teaspoon
8. Fenugreek seed powder: ¼ teaspoon
9. Lemon Juice: ½ teaspoon
10. Cayenne Pepper: 1 teaspoon
11. Salt: ½ Table spoon

 

Method

Step 1: Prick the skin of the eggplant with a fork. Put in a plate. Cover it with Saran wrap. Microwave at high for 5 minutes. Microwave again at 30% power for 5 minutes. Remove from the oven. With a sharp knife, remove the green crown. Remove the skin if desired. I leave the skin on. The plate will have some juices from the eggplant. Don't discard the juices. Mash the eggplant and juices into a pulp.
Step 2: Heat a pan. Add olive oil. Sauté onions till clear. Add minced garlic and the chopped tomatoes. Fry together till oil starts to separate (about 3 minutes). Shut off heat.
Step 3 : Add remaining ingredients. Stir.
