What is Potli?

Potli is a thin muslin sac filled with spices. In concept it is similar to 'Bouquet Garni'. You tie dry herbs with a string to make bouquet garni. The garni is put in making soups. After the cooking is finished, the bouquet garni is removed before the soup is served.

 

The Indian spice Potli is filled with whole spices such Cloves, Coriander seeds, Cumin Seeds, Fennel seeds, Cardamoms, Peppercorn, Cinnamon sticks etcetera. After the Potli is filled, a string is tied to keep the spices in the sac. The Potli is put in the dish being cooked. After the cooking is complete, the Potli is removed.

 

The easiest way to make Potli is to fold cheese cloth twice. Folding reduces the hole size in the cheese cloth to prevent spices from falling out. You need about 6"x6" working area. Put the spices in the center of the folded cheese cloth. Gather the edges and tie it with string. You can make the string long enough and tie it to the handle of the stock pot, making it easies to remove the Potli after the cooking is complete. If the handle is not convenient, just use prongs to remove it.
