What is Jhol?Jhol is a thin curried spicy soup In North India, Aloo Jhol is made with potatoes, Turmeric, Salt, Cumin, Red hot chili peppers (Cayenne), Onions, Amchoor, and lots of water. The potatoes are over-cooked till the exterior starts to crumble. The disintegrating surface of the crumbing potatoes renders body to the soup. The soup is made so it can be drank from the earthen cup it is served in. Therefore, the spices are always ground up. The texture of soup is smooth. In the olden days, Aloo Jhol was a traditional dish served in the wedding receptions. In one of the variation, bits of tomatoes are added. In another variation, yogurt is added In Bengal, Jhol is made with fish. |
