What is Dhuandaar (Smoked meat)?

In Hindi Dhuan means smoke, Dhuandaar is smoked food. Dhuandaar Meat is prepared in North India.

In India, we don't use specific types of woods and smokehouses to smoke meat. Meats are smoked to absorb spice flavors, specially the cumin seeds.

 

Red hot charcoal pieces are put in a small clay pot called Angithi. Angithi is placed in the center of a larger clay pot. Cooked meat is placed around the Angithi.

 

A dry mix of spices is prepared.  The dry spices include Cumin seeds, Cinnamon, Cloves, etc. The dry spice mix is poured over the burning coal. With a long handle spoon made of iron, Ghee is poured over the spices on the coal. The large pot is covered with a lid. The meat absorbs the smoked spiced flavors.
