What is Ceylon Curry?

Ceylon Curries originated in Ceylon. Ceylon is the former name of Sri Lanka. Sometimes these curries are just called Ceylon such as Ceylon Chicken
The curry spices are always dry roasted in a hot pan: Cumin, Fennel, Fenugreek. It also includes warm aromatic spices such as: Cinnamon, Cloves, Cardamom, and Curry leaves.
Ceylon curries are rather hot made with lots of fresh hot green chili peppers, and dried hot red chili peppers.
In the curry gravy, you will find lemon grass, screw pine (Kewra) leaves, lemon juice, and plenty of coconut milk.
Day-old curries always taste better than fresh curries. This allows the spices to actually blend in and get mellow.
