What is Balchao?
Balchao was introduced by Catholic Portuguese to Goa during colonization. This has a number of whole spices and a lot of whole cayenne pepper, sugar, and vinegar. Fish, prawns, and vegetables are pickled in this mixture for a couple of days. The pickle may be cooked and reduced like dry curry. Catholic homes may use coconut vinegar for its acidic sharpness, Hindu families may use cane vinegar to make it milder. Nowadays, it is common to use white distilled vinegar or malt vinegar. Balchao is normally served with Bhakri. Bhakri is bread made with dried shrimp. You tear the bread in to pieces and put it in a bowl of Balchao. For beverage, coconut Feni (Mature Toddy) is used. |
