What is a Achari?

Achari is a curry made with common Indian pickling spices
In Hindi,  Achar means Pickle. Achari is a type of Curry made in Punjab. In the olden days, Achari curry was made from the spices left over after the pickle had been consumed.

Nowadays. we just make it from scratch by using whole spices commonly used in making Pickles. The spices are not ground to a powder, and not used as a whole. The spices were dry roasted in a hot pan one at a time, and left to cool off. After they were cooled, it was transferred to Hamam Dasta (Mortar and Pestle). Pestle was used to bruise and crush the spices to make a coarse mix.
The other major ingredient is Mustard Seed oil.
