What is Kachumbar (Kachumber)?

 

Kachumbar is a mix of finely chopped fresh vegetables served as a side of salad

 

In Hindi, Kacha means 'Raw or uncooked'. Kachumbar is literally small tiny pieces of raw vegetables. In the olden days, Kachumbar consisted of finely chopped onions and Kakri (English Cucumber). Sometimes, grated Mooli (Indian radish) was added. The chopped raw vegetables were allowed to rest so that the flavors would blend in. A dressing of Sugar cane vinegar, or Lime juice was used.

Modern Kachumbar mimics Mexican Salsa. It has Cucumber, Tomatoes, Onions, and Cilantro.

In Moghul Cuisine, Kachumbar was served as a companion along with Haleem, or Kebabs.

 

During summer, Kachumber is associated with cool refreshing effect. The form of Kachumbar (Finely chopped) allows it to be gathered in a scoop made out of torn piece of Roti  or Nan. The scoop was our edible spoon to eat curry or even Kachumbar.

 

Is Kachumbar a Salad?

No. You may call finely chopped salad as a Kachumbar but not vice versa.

 

Is Kachumbar a Relish?

No. Relish is normally aged in a medium. Kachumbar is mixed and rests only about an hour before it is ready to be eaten. Also, the dressing is only used when ready to serve.
