What is Paneer?

Paneer is Indian cheese made by acid coagulating whole milk at high heat

 

The whole milk is brought to a boil. Acid is added to coagulate milk. The whey water is discarded and the cheese is harvested. This cheese is called Chenna. The Chenna is pressed to form a block of cheese. This cheese block is called Paneer. It is very similar to Ricotta cheese in texture with the exception that it is in block form.
