How to store Potatoes?

Potatoes can be stored at room temperature for about a week.

To store for up to six weeks, they should be stored in a dark and well ventilated space at 45 to 50º F.
The potatoes are sensitive to light, temperature as well as humidity. I recommend putting potatoes in a brown paper bag with large holes all the way around, keeping light to a minimum and air to circulate around the potatoes. Then put the bag in the basement where it is cool.
If the potatoes are stored in the refrigerator, they will turn somewhat sweeter.
Never store onions along with potatoes. Potatoes emit gasses that would ruin both the potatoes and the onions.
