How is Amchoor made?Amchoor is made from raw mangoes that have minimum fibrous material in the meat. The 'Raspuri' is a good variety. The mangoes are peeled and then sliced very thin. The thin slices are laid out on a muslin sheet in a single layer. They are laid out to dry in the hot sun as soon as possible. If it takes too long to dry, the slices will discolor to grey color. As soon as the slices are bone dried, they are pounded to make the powder. |
