What is Modern Indian Cuisine?Indian history goes back over 5,000 years. Modern Indian Cuisine is a fusion of ingredients brought in by traders from Mid-east, incursions by Mongols, Moghul rule, colonization by Portuguese, and colonization by British. Can you imagine Indian Cuisine without Cayenne pepper, Tomatoes, or Potatoes? How Mongols influenced Indian Cuisine? How Portuguese influenced foods in India? What is the major contribution of British to Indian Cuisine? Cooking techniques were influenced by Aryans (Pot cooking), Nawabs ( Dum cooking), Moghul (Tandoor cooking), British (Baking), Portuguese (Baking, Pickling).
There are three major categories of Indian food today. Foods served in restaurants (UK and India)Most of the restaurant foods are from Punjab, because the Punjabis were the first to set restaurants in India and UK. The common foods served in restaurants are: Naan, Paalak Paneer, Makhni Dal, Makhni Chicken, Rogan Josh. In UK and large metropolitan cities in India (Delhi, Bombay), you will find Tikka Masala, and Jalfrezi. Samosa, Paaperdum, Green Chutney are a must at any restaurant. The Dosa is becoming popular at many of the Indian restaurants. Street Foods in IndiaThe pushcart vendors, bazaar corner Halwaii, Hawkers carrying on the back of their bicycles were common street food vendors. The food is spicy, tart, tangy, greasy. These are basically snacks. In North India the common street foods are: Chaat, Kachori, Pakora, Aloo Tikki, Goal Guppa, Jal Jeera Pani, Cholay Bhatura. In South India Mirchi Bajji is common.
