What is the oldest spicy hot dish in Indian Cuisine?I believe Vindaloo to be the oldest spicy hot dish using red chili in India. I can only offer a circumstantial evidence 1. Portuguese traders brought Chili pepper to India during early sixteenth century 2. Portuguese colonized Goa during late fifteenth century 3. 'Vinho de alho', is an old Portuguese Pork preserve in Vinho (Red wine vinegar) cooked with a lot of Alho the garlic. I assert that natives converted the preserve into a Pickling Marinate for pork with locally used whole spices and lots of newly introduced hot red chili pepper to the preserve. The marinated pork was browned in pork fat, the marinate was ground and cook, together braised dish became the Vindaloo. |
