How to control  tomato acid taste in Curry Gravy?


If tomatoes are too acidic, you may use any or all of the following techniques:
1) Add a pinch of sugar. Don't over do it; if you want to maintain natural taste.
2) Add ¼ teaspoon of baking soda to a gallon of sauce. Don't over do it to avoid after taste.
3) Add grated carrots (about one cup to 1gallon). This is my favorite. After the carrots are cooked in they will leave no after taste, rendering a natural sweetness of tomatoes.
