What should I know about cooking potatoes?


1) If you are making gravy or soup like dish, add half of the salt when cooking and add the remaining half after cooking. Potatoes absorb salt while cooking. You want to add some salt while cooking to flavor inside of potatoes and some salt after cooking for taste. This may be very useful for persons on reduced salt diet, they can just ignore the last of half of the salt.
2) If you are going to cook potatoes for a long time period and don't want them to break up or crumble, add a small amount of white vinegar after they are cooked half way through. This is the secret of German potato salad.
3) If you are going to bake potatoes, pre-soak them in water with salt for about one hour before baking. This will give added flavor to the potatoes.
