How to cook beans to reduce gas discomfort?
A complex sugar called 'Raffinose' in the beans passes through small intestines to large intestines where it forms gas
The lentils/beans/pulse are a part of main diet in India. The best steps you can take are as follows:
1. Presoak beans in water for a minimum of eight hours at room temperature.
2. Discard the water used in pre-soaking. Rinse in cold water.
3. Add cold water and an un-peeled orange to the beans. Bring it to a boil. Let it simmer for five minutes. Remove the orange.
4. Cook per recipe. Don't forget to add Amchoor (Mango powder), fennel seeds, fresh peppermint, fresh cilantro and fresh ginger. Each of these help converting Raffinose to simpler sugar forms.
There is another easy method. Just buy 'Beano' at any drug store. It will 'eat up' Raffinose before it gets to the Large intestines. Remember Beano is a natural enzyme. Don't cook with it. The enzymes in the Beano are destroyed with cooking.
