How to prevent discoloration of peeled or cut raw potatoes?The surface of raw potatoes discolors as they are peeled or cut when exposed to air as a result of chemical reaction The discoloration can be prevented by coating the surface with a very small amount of acid. This cane done by adding either fresh lime juice or white vinegar to water. Add One to Two Tablespoons of either White vinegar or freshly squeezed lime or lemon to One quart of water. Put your potatoes in this acid water as they are peeled or cut. The acid water will coat the exposed surface, so the potatoes are not discolored. |
