Indian offal foods are primarily made from internal organs and entrails of butchered goats/sheep and chicken.

Offal foods are common among pheasants, and Muslims. Eid-ul-Adha / Eid-ul-Zuha is the most celebrated Muslim festival in India. During this festival, Bakri (Goat) is sacrificed (Qurbani). It is customary, to cook and eat internal organs of the sacrificed goat. These foods will continue to play a significant part in Indian Cuisine due to their association with religious festival. The festival is also called Bakri Eid. In Delhi, you will see the largest number of goats for sacrifice near Jama Masjid than any other time during the year. Popular dishes are made from Brain Kidney Liver and Lung harvested from the sacrificed goat.

These items are cleaned and cooked individually or in combination as damp stir-fry curry called Masala Fry or Bhuna.

People shy away from using the word Kapura (Testicle) in public. Restaurants who carry the item, do not list it on the menu. Mothers who cook testicles, mislead children in believing it is some other organ. Testicles are cooked separately or in combination with Kidney as a damp stir-fry curry

This is a soupy curry using Mutton or Goat trotters


Spleen 'Tilli Masala', a damp stir-fry curry

Udder 'Khiri Tikka' is made with minced Udder. 'Khiri Kebab' is made with Udder muscle.
