How to make Frozen Yogurt?

Frozen yogurt can be made as a Kulfi (still Ice cream) or as an ice cream

here are many methods used to make frozen yogurt at home. The primary difference is how we thicken the mixture. Following are some of those methods.

 

1. Yogurt cheese (Hung Dahi)

This eliminates the need for thickening the mixture. Basic steps follow:

Line a colander with multiple layers of cheese cloth. Pour Yogurt. Let it drain for nearly 6 to 8 hours.

Add sweeteners such as powdered sugar, honey, or corn syrup.

Add chopped nuts, fruits, and flavorings such as Kewra, Rose, Vanilla.

Mix well.

Make Kulfi or Ice cream in an ice cream maker.

2. Eggs

Heat milk and sugar to at least 160º F. Make sure that sugar is all dissolved.

Let it cool to about 140º F. Beat egg yolks. Stir in. Heat to 175º F. Cook to custard consistency.

Let it cool to room temperature.

Stir in yogurt,  add chopped nuts, fruits, and flavorings such as Kewra, Rose, Vanilla..

Age the mixture in refrigerator over night.

Make Ice cream using Ice cream maker.

 

3. Egg Alternates

Shrikhand Yogurt Ice Cream Recipe This is my favorite recipe that combines pistachios, saffron and needs no eggs.

Two most common items used are either gelatin or corn starch.

For gelatin, sprinkle gelatin over milk. Bring it to a boil. Add sugar. Let it cool to room temperature.

For corn starch, stir corn starch in milk making a slurry. Bring it to a boil. Add sugar. Let it cool to room temperature.

Stir in yogurt,  add chopped nuts, fruits, and flavorings such as Kewra, Rose, Vanilla..

Age the mixture in refrigerator over night.

Make Ice cream using Ice cream maker.
