How to extend curry gravy?

You got two additional guests at dinner time? There is just not enough gravy in the curry

You need a curry extender. There are two curry extenders used in Indian cuisine: Tomato, and Creamy. Tomato Curry extender is a general purpose extender and not just for Tomato based curries. Curry extenders add additional amount of gravy to an existing curry. After the extender is added, the curry should be stirred and simmered for about 5 minutes to allow all the flavors to blend in. All the recipes here will make one cup of extender.

 

Tomato Curry Gravy Extender

Ingredients

1. All Purpose Flour (Maida): 2 Tablespoons

2. Ghee: 2 Tablespoons

3. Water: 1 Cup

4. Turmeric Powder: 1/8th teaspoon

5. Salt: ¼ teaspoon or to taste

6. Ground Cayenne: 1/8th teaspoon or to taste

7. Degi Mirch (Paprika): ¼ teaspoon

Method

1. Combine Maida, Ghee to form a paste.

2. Cook Maida paste in a heavy bottom pan on low to medium heat till it starts to bubble stirring constantly cooking about 3 minutes.

3. At this point, you may add Curry Powder Standard Onset Punjabi of your choice. I have chosen to add Turmeric powder, salt and cayenne. Cook stirring constantly for about two minutes.

4. This is the time to add sweet aromatic spices such as Punjabi Garam Masala . I have chosen to stir in Degi Mirch.

4. Gradually add water, stirring constantly. Bring it to a boil.

5. Simmer for about five minutes till it thickens.

 

Creamy Curry Gravy Extender

Ingredients

1. All Purpose Flour (Maida): 2 Tablespoons

2. Ghee: 2 Tablespoons

3. Milk: 1 Cup

4. Salt: ¼ teaspoon or to taste

5. White ground pepper: 1/8th teaspoon or to taste

Method

1. Combine Maida and Ghee to form a paste.

2. Cook Maida and Ghee in a heavy bottom pan on low to medium heat till it starts to turn brown. Stir constantly during this process to eliminate scorching. It will take about five minutes.

3. Stir in salt and pepper and sweet aromatic spices such as Punjabi Garam Masala .

4. At this point you will add milk or other fluids used to make the gravy. For example, you may add coconut milk for Southern Korma. I have chosen to add milk. Add milk stirring constantly. Bring it to a boil. 

5. Simmer for about five minutes till it thickens.
