Why don't we use hot tap water to drink or cook?

Hot tap water may be contaminated with lead

In the olden days, the house plumbing in the United States used materials that contained lead. Even after the transition to copper pipe, the lead is a component in the solder used to fix the joints together. The lead in the pipes is dissolved in the pipes with hot water. Therefore, EPA recommends no to use any hot tap water for human consumption.
