Why are the coffee beans roasted? |

| Roasting process primarily changes the sugar in the beans, effecting the bitterness, sweetness and the flavor
During the roasting, beans lose about 18% weight, and may expand in size by about 80%. Light roast has mild flavor, Double roast (Almost black) has strong bitter flavor. Double roast is used to make espresso. Roasting beans does not effect the amount of caffeine. |
