How to choose a Slow Cooker?

The slow cookers are available from small 2 quarts to nearly 20 quart roasters. Newer models are even programmable

How to use Slow cookers for Indian Cuisine?

For average home use, I recommend following.

1. Choose a near six-quart size. This will permit you to cook foods equaling 12 cups to 16 cups.

2. Make sure the inserts are removable, preferably ceramics. Removable inserts will make cleaning easy.

3. I prefer heating elements that surround the inserts over the heating elements located on the bottom. The surround heating element permit even cooking and cook faster.

4. Some of the models have adjustable thermostats. For most of the recipes, you only need two settings: Low and High. Low is same as 200º F, and High is same as 300º F.
