How to choose skewers for kebab?
In India, the skewers are made of round metal stock. They resemble knitting needle. They may be pointed on both sides or pointed on one side with a handle on the other side. In United States, the skewers are either made of Bamboo or Metal. Bamboo SkewersThese are disposable skewers, with lengths varying from 6" to 18". They are flat with a pointed ends on both sides. The flat ness keeps the meats from rolling off while turning over. Newer versions have two prongs. The skewers must be soaked in water from 30 minutes to about an hour to prevent them from catching fire.
Metal skewersTheses skewers vary in length from 6" to 18". Do not choose round skewers to prevent food from rolling off. Choose either flat or double prong skewers. Remove from from the metal skewer before eating. You may burn your tongue or lip from the hot metal. Some of the metal skewers come with a rack. It is useful if you plan to cook on the charcoal grill. The rack may be equipped with a lever to turn all the skewers over with a single twist. |
