How to use a sizzler pan? Cast IronRestaurants serve Tandoori dish in an oval shaped hot cast iron platter on top of wooden stand. This platter is called sizzler
CookwareSizzling pan. Click here for How to choose a sizzler pan . Mittens
Ingredients1. Cooked/Baked Tandoori food 2. Sliced Onions: ¼ to ½ Cup I use red onions. They give a nice eye appeal and emulate the onions normally used in India. 3. Ghee or Cooking oil: 1 Tablespoon 4. Fresh Lime or Lemon: About 1 teaspoon 5. Fresh Cilantro chopped: ¼ Cup
MethodStep 1: Heat sizzler on stove top for about 5 minutes till it is really very hot. It might get a bit smokier. Step 2: Turn off heat. Don't add food or shortening with heat 'turned on' to prevent fires.Step 3: Scatter some sliced onions on the the sizzler. Step 4: Put cooked Tandoori food atop of the onions. Step 5: Pour ghee or cooking oil around the outer edge of the food. The oil will get hot and reach onions. The onions will start to sizzle giving the food a smoked flavor. Step 6: Squeeze some fresh lime or lemon juice. Step 7: Garnish the dish with chopped fresh Cilantro leafs Step 8: Use mittens to remove the sizzler and put it on the wooden stand. The sizzler will remain hot for about an hour depending on its weight.
NoteSteps 3, 4, 5 and 6 should be done as quickly as possible after turning off the heat while the pan is really hot |
