The ChoiceThe sizzlers used in the restaurants have no handle and are oval shaped. For home use, Fajita sizzler pan made of cast iron are excellent. The Fajita sizzler pans available in United States have a handle for ease of use. The outer edge is slopped up like a sauté pan about ˝ to 1" up. This prevents food from falling out. The Fajita sizzler pans also come with the wooden stand.
Some of the pans are coated with enamel. I don't recommend using these pans. They are thinner, don't hold heat long enough, and chip. The plain cast iron pans once seasoned , don't need the coating. An 8" round pan will do most of the jobs.
Alternate to Sizzler pan Use a standard cast iron sauté pan as a sizzler. You will also need an old fashioned wooden Chakla (used to roll Roti) as a stand for the cast iron sauté pan. |
