What tools do we need in today's Indian kitchen?

Modern Indian Kitchen is equipped small electric appliances and quality knifes and cookware
In my Kitchen you will find the following tools
 

1. Hand Blender Hand blender

280 watt Braun . It has detachable stainless steel blending implement, making it much easier to clean. I use it to thicken Dal while they are still in pot, make chutneys in their own containers.
 

2. Electric Blender Blender

To make Chutney, Lassi...
 

3. Electric or Gas Deep fryer Deep fryer

To make Samosa, Pakora, Poori, Kachori and so many other items.
 

4. Rice Cooker  Rice Cooker
 

5. Food Processor Food Processor
 

6. Knives Knifes

Paring knife, Utility Knife 7", Chef's Knife: 10", Sharpening steel 10", V Knife sharpener Tungsten Carbide

 

7. Cutting Board Polypropylene Cutting Board

I have two cutting boards. I use two boards to press coagulated milk for Paneer
 

8. Curry Pans Curry Pans

Sauté pan, Brazier Bhagar Pan (Pali)
 

9. Pressure Cooker Pressure cooker

Rajma, Chickpeas.. Big time saver. Some people also use them to make Basmati Rice. Of course, making Basmati Rice in the pressure cooker loses most of its fragrance and to me it is drier. Some make Dal in Pressure cooker. I don't recommend it cook Dal as the boil over may clog vent pipe.

 

10. Roti Maker Electric Roti maker

It may not lend itself to do all your dough pressing needs. Today's machines are made for 1 mm thickness when fully pressed.
 

11. Meat Thermometer & Electric Heating Pad

I use this combination where we know the temperature profile for various cultures, Dahi, Naan (yeast).
 

12. Microwave Oven 1100 watts

Good for reheating foods. Good for making Papad, roasting Eggplant.
 

13. Wrought Iron Griddle (10")

I use it as a Tawa to make Roti, Paratha. It is also good to make Dosa, and Cheela.

15. One Brick

I have it wrapped in aluminum foil. I use this as a weight for applications such as making Paneer.
 

16. Rolling Pin (8")

I use one of the cutting boards as a Chakla to roll out Roti
 

17. Karahi (10")

I brought it from India 40 years ago. I still use is on the gas stove. It still does a lot of frying...
 

Wish List
I am waiting for some company to make two appliances
1. Table top Tandoor: Small terracotta/ceramic/stone electric Tandoor,  just big enough to make a Naan or Tandoori chicken for four persons (about 4 pounds). We can even use it to make a personal size 12" pizza. You can buy a double Decker 220V electric pizza (12") oven. It will do Naan nicely but not convenient for Tandoori Chicken
2. Table top Holding Oven: A  1 or 1 ½ cubic feet (About the size of a large microwave oven) Holding Oven that can be set for an ambient temperature between 86º F to 120º F  for an extended period of up to 12 hours. This will be very useful in making: Dahi, Naan, Idli, Marinate Chicken/lamb. You can even sprout Mung beans or brew Kanji in such a contraption.
