Exchange List Vegetables for Diabetes

 

Vegetable List excludes starchy vegetables and dried beans. Potatoes, corn, peas, and Dal are included in 'Starches and Breads'.

 

The USDA 2005 guidelines also includes beans/lentils in this group.


Vegetables may be fresh or cooked preferably steamed without fat.
Exchanges for vegetables are 1/2 cup cooked, 1 cup raw, and 1/2 cup juice.
Artichoke (1/2 medium), Asparagus, Beans (green, wax, Italian), Bean sprouts, Beets
Broccoli, Brussels sprouts, Cabbage (cooked), Cauliflower, Eggplant, Greens (collard, mustard, turnip), Karela, Kohlrabi, Leeks, Mushrooms (cooked), Okra, Onions, Pea pods, Peppers (green), Pumpkin, Rutabaga, Sauerkraut, Spinach (cooked), Summer squash (crookneck), Tomato (one large), Tomato/vegetable juice, Turnips, Water chestnuts, Zucchini (cooked)
