Exchange List Meats and Cheeses for Diabetes

 

ADA lists meats in three categories: lean, medium fat, and high fat. Medium fat and high fat meats should be avoided by over-weight persons and persons with high cholesterol.

 

I have only included lean meat items. The meats should be fully trimmed of any visible fat. The skin from the chicken should be discarded.
1 oz. cooked lean Beef, Pork, Veal, Chicken (without skin), Venison (Hiran), Rabbit, Squirrel, pheasant, and Fresh or frozen fish
h (crab, lobster, scallops, shrimp, clams)
6 medium oysters
¼ Cup water packed tuna
2 medium sardines
1 oz. of 95% fat-free lunch meat slice
3 Egg whites
¼ Cup Egg Substitute
½ Cup cottage cheese
2 Tablespoons Grated Parmesan cheese
1 oz Diet cheese (Less than 55% calories per ounce)

Cooking Notes

1. 4 ounce uncooked meat yield 3 ounce of cooked meat
2. ½ Skinless boneless chicken breast yields 3 ounce cooked chicken breast
