Gluten Sensitivity and Diabetes

Persons with Diabetes Type I, and their family members have a 5% risk of developing Celiac disease, or sensitivity to gluten.

Gluten is found in wheat, rye, barley, and oats. Celiac disease damages the small intestines making it difficult to absorb the nutrients. For Gluten sensitive persons, Bajra, Ragi, Jowar, and Amaranth are suggested to replace wheat.

How to make Gluten free breads (Roti)

One should not assume 'gluten sensitivity' and start a gluten free diet without consulting a physician. Physician will run a blood test to measure antibodies to gluten. If the blood test suggests Celiac disease, the physician will perform a biopsy on a tissue removed from the intestine. After a preliminary diagnosis has been made, you will be asked to go on a gluten free diet. The physician will confirm the diagnosis only after there is an improvement while on gluten free diet.
