Urad Chakki RecipeUrad Chakki is a common confection used in Rajasthan.
IngredientsUrad Base1. Urad Dal Powder: 2 Cups 2. Whole wheat Atta: ½ cup 4. Coriander seeds (split): ¼ Cup Khoya1. Ricotta Cheese: 1 cup 2. Whole dried milk: 1 Cup 3. Un salted Butter: ½ Sticks
Nuts1. Almonds: 2½ Cups 2. Desiccated dried coconut: 1Cup
Syrup1. Sugar: 1¾ Cups 2. Water: 1 Cup 3. Saffron strands: 8 4. Cardamom powder: 1 teaspoon
MethodStep 1 Atta Base1. Mix Urad Dal flour and Whole wheat flour. 2. Heat Ghee in a heavy bottom pan. 3. Add flours. Fry flours on low heat till golden brown. 4. Stir in Coriander seeds. Fry two minutes. Step 2 Khoya1. Mix Ricotta cheese and dried milk. 2. Heat a large pan. We will use this pan to assemble and cook the whole recipe. 3. Melt butter in the pan. Add ricotta cheese and dried milk. Cook till it is dough like consistency. 4. Add the Atta Base from Step 1. Step 3 NutsProcess nuts in a food processor in Pulse mode to grind coarse. Add to Mix from step 2. Add desiccated coconut to mix in Step 2.
Step 4 SyrupCombine water and sugar. Bring it to a boil. Cook till 224º F. Stir in saffron and cardamom.
Step 5 Wet MixAdd syrup to mix in step 3. Cook for 10 minutes Transfer the contents in a greased pan forming a slab about ¾" thick. Let it cool before cutting. |
