Sohan Papri Recipe

Made with Besan Maida Ghee sugar Milk Nuts and flavored with cardamom

The dish is popular in Punjab region.

 

Ingredients

1. Besan (Chickpea flour): ½ Cup

2. Maida (All Purpose flour): ½ Cup
3. Ghee (Clarified butter): 1 Cup
4. Cardamom seeds: ½ teaspoon

5. Seeds Nuts: ¼ Cup Total

Watermelon seed, Cantaloupe seeds

6. Sugar: 1 Cup

7. Water: ¾ Cup

8. Milk: ¼ Cup

 

Method

1. Cook water, milk and sugar to 240º F to make syrup. Set heat to low.

2. In a separate pan, mix Ghee and Besan, and flour. Turn on heat. Cook it on low heat till the flour turns light brown.

3. Add half of the mixture to syrup. Stir till well mixed. Add the remaining half. Stir till well mixed. Beat the mixture with a fork till it forms flakes.

5. Turn off heat. Stir in cardamom powder.

6. Put it in a deep cookie pan while still hot. Sprinkle the nuts over the surface. Press the ingredients with spatula. Let it cool.
