Shahi Tukra (Bread Butter Pudding) Egg-less RecipeThe recipe is based on British Bread and Butter Pudding. The major ingredient avoided is the eggs IngredientsMilk Syrup1. Milk : 4 Cups 2. Sugar: 1 cup 3. Ghee: 1 Tablespoon 4. Saffron: 4 strands 5. Ground Cardamom: ¼ teaspoon Bread and Garnishing1. Bread: 8 slices I like to use Texas toast. It has nice thick slices 2. Ghee: ¼ Cup 3. Golden Raisins: 1 Tablespoon 4. Crushed Pistachios: 1 teaspoon
MethodMilk Syrup1. Mix Milk, Sugar, Saffron, and 1 Tablespoon of Ghee in a heavy bottom pan. Cook to reduce half the volume about 2 cups. You will need to stir constantly to prevent scorching. 2. Stir in cardamom powder. Let it cool till it is at room temperature. Bread and Garnishing1. Heat a flat pan. Baste a cut up slice of bread with Ghee. Fry one slice at a time till both sides are crisp golden brown. 2. Stack the bread in a serving pan. Put a few raisins in between two adjoining bread slices. 3. Pour milk syrup over bread. 4. Sprinkle crushed pistachios over the the dish before service. |
