Seviyan Kheer (Vermicelli Pudding) Recipe

Made with vermicelli evaporated milk sugar almonds flavored with Kewra

In United States, we can use Vermicelli or Angel Hair Pasta.  Vermicelli is same as Sevian, it is thinner than thin spaghetti, and slightly thicker than Angel Hair. If you want to be authentic, make your own evaporated milk by reducing 5 cups of whole milk to 2½ cups.

 

Ingredients

1. Ghee: 2 Tablespoons

2. Vermicelli: 3 oz

It is normally sold as one pound package. You can divide a package in 5. Break the vermicelli about the length of your middle finger (3")

3. Evaporated Milk: 2½ Cups

4. Sliced Blanched Almonds: ¼ cup

5. Sugar: 1½ cup

6. Kewra: 4 drops

 

Method

1. Heat Ghee in a heavy bottom frying pan. Fry vermicelli in hot Ghee till it is lightly brown. It will take about 5 minutes. Scoop out the Vermicelli with a slotted spoon. Set aside.

2. Heat evaporated milk in heavy bottom pan to a boil. Add fried Vermicelli. Cook till vermicelli is tender, about 15 minutes.

3. Add sugar. Cook for five minutes till the sugar is consumed.

3. Turn off heat. Stir Almonds and Kewra.
