Sesame Gajak Fudge Recipe

Gajak is a form of nut brittle made in India. Normally, it is made with sesame seeds. It could also be made with Chilgoza, watermelon or cantaloupe seeds.

Unlike hard crack stage, the syrup is cooked only to softball stage as if to make Fudge in United States.

 
Ingredients

1. Sesame seeds: 1 Cup

2. Salt: Pinch

3. Jaggery: 1 Cup

4. Water: ½ cup

5. Ghee: 3 Tablespoons

6. Cardamom seed Coarse ground: 1 teaspoon

 
Method

1. In a non stick pan, dry roast sesame seeds on medium heat for about 10 minutes. Sprinkle salt.

2. Combine Jaggery and water in a heavy bottom sauce pan. Bring it a boil. The experience Halwaii knows from the bubbles on the bottom, when the syrup is ready. Instead we will use a candy thermometer. Heat to 240°F.

3. Combine roasted sesame seeds, Ghee, and Cardamom powder. Let it cool to 110ºF

4. Prepare a kneading surface. Line it with or butter. Mix and beat mixture about 3 minuts.

5. Line a baking sheet pan with a parchment paper. Butter the parchment paper with Ghee or Butter.

6. Transfer the mixture on to the sheet pan. Use the wooden spoon and flatten it out to about 1/8th to ¼ to thick slab.

5. Let it cool completely before breaking in to pieces.
