This is my favorite ice cream. It is necessary to follow all the steps and meet temperatures to avoid formation of Ice crystals. The process is simple but takes 2 days to make this ice-cream.
Ingredients1. Pistachio Nuts: 1¼ Cup 2. Whole Milk: 2½ Cups 3. Heavy whipping cream: 1 Cup 4. Sugar: 1 Cup 5. Egg yolks: 3 5. Almond extract: 1 teaspoon
MethodPrepare PistachiosShell nuts. Brink water to a boil. Soak nuts in the boiling water for one minute. Drain. Rub the nuts with hand to remove skin. Mixture Use Electric blender1. Puree Nuts, milk, cream, sugar, and egg yolk in a blender. You will have smooth green paste. 2. Heat the mixture to 175º F. Do not let it come to a boil. The egg yolks will start to curdle at high temperature. Cook for about 25 minutes. If the back of the spoon is nicely coated, shutoff the heat. Now you have Ice cream mix. Let the mixture come to room temperature. 4. Stir in the Almond extract. AgeingPut the Ice cream mixture in the refrigerator for 12 hours.
Make Ice cream per the Ice cream maker instructions. Remove the ice cream from the ice cream maker and put in the freezer for four hours before serving. |
