Pista Blondies Recipe

Pista Blondies are made with Jaggery Pistachios and flavored with Almond extract and Kewra essence

Typically, Blondies are Brownies without chocolate, made with dark brown sugar and butter-scotch chips

I am using Jaggery for brown sugar, and Pistachios for butter-scotch chips. The vanilla has been replaced with Almond extract and Kewra essence

 

Ingredients

Wet Mixture

1. Un-salted Butter: ½ Cup

2. Jaggery Grated Packed: 1 Cup

3. Large egg beaten 1

4. Pure Almond extract: 1 teaspoon

5.Kewra essence: 6 drops

Dry Mix

1. All-purpose flour: 1 Cup

2. Baking powder: ½ teaspoon

3. Baking soda: 1/8 teaspoon

4. Salt: 1/8 teaspoon

Add-in

1. Pistachios: ½ cup

 

Method

Step 1: Wet mixture

1. You will need an Electric Mixer. Beat butter for 1 minute

2. Gradually add sugar and beat to a light fluffy mixture, about 3 minutes

3. Add egg, Almond extract and Kewra essence. Beat about one minute to form a smooth mixture

Step 2: Dry Mix

Mix all ingredients well. Sift

Step 3: Batter

1. Gradually add dry mix to wet mixture beating at low speed

2. Stir in Pistachios

Step 4: Baking

1. Preheat oven to 350º F

2. Grease a 8x8 baking pan. Dust it lightly with flour

3. Transfer batter to baking pan

4. Bake for 20 to 25 minutes, until a toothpick comes out clean

5. Allow to cool. Cut into half horizontally and vertically, making very large 4 squares. Cut each square at half again. You will have 16 of 2" x 2" squares
