Peanut Sugar Chikki Brittle Recipe

Modern peanut Chikki (brittle) is made with white table sugar. In India, Glucose is added to control crystals. In United States, corn syrup is used in lieu of Glucose. I have used dry roasted peanuts widely available in US stores. You may roast your  own peanuts in the oven.

Traditional Peanut Chikki with Jaggery

 

 

Ingredients

1. Dry roasted salted Peanuts shelled halves: 2 Cups

2. Table sugar: 1½ cup

3. Water: ¾ cup

4. Corn syrup: ¾ cup

5. Ghee: 1 Tablespoon

6. Cinnamon: ½ teaspoon

7. Baking soda: 1½ teaspoon

 

Method

1. Put Sugar, water and corn syrup in a heavy bottom sauce pan. Heat on medium heat till sugar is dissolved.

2. Increase heat till the syrup reaches 260°F. It will take about half an hour.

3. Add nuts and Ghee. Cook till temperature reaches 290°F. It will take about 10 minutes.

4. Add cinnamon and baking soda. The mixture will foam up.

5. Line a baking sheet pan with a parchment paper. Butter the parchment paper with Ghee or Butter.

6. Pour mixture on to the sheet pan. Use the wooden spoon and flatten it out to about ¼" thick slab. You want it done while the mixture is hot.

7. Let it cool completely before breaking in to pieces.
