Nankhatai Old fashioned Biscuit (Cookie) Recipe

Original recipe lists six ingredients Flour Ghee Sugar Palm-Toddy Eggs and Almonds

Following points should be noted

1. Sura is sap from the Palm tree, or toddy. It is alcoholic. After independence, there was a period of prohibition, and the bakeries switched over to potatoes and hops for lost flavor. I will use small amount of beer to give the flavor of hops. Don't worry about alcohol in the beer, it will dissipate during baking process. I will add baking powder for leavening.

If you do not want to use beer, replace it with equal amount of water.

2. The original recipe used granular sugar that was ground in a hand operated flour mill (Chakki). This resulted in about 50% powder and rest in various size of granules. I will use granulated sugar and process it in a food processor, just long enough so that half of the sugar has been ground. To simplify process, you may use half powdered sugar and half granulated sugar.

3. If you do not want to use Egg, replace it with 3½ Tablespoons of whole milk. Without eggs, the top surface of the cookie will look crackled. The egg makes the surface look smooth.

4. I have added cardamom seeds for flavor. You may totally omit cardamom seeds.

 

What is Nankhatai?

 

Ingredients

Wet Mixture

1. Granulated Sugar: ¾ Cup

2. Ghee: 1 Cup

3. Egg: 1 lightly beaten

4. Beer: 2 teaspoons

Dry Mix

1. All Purpose flour (Maida): 2 Cups

2. Baking powder:½ teaspoon

3. Fine grain sea salt: ¼ teaspoon

4. Powdered Green Cardamom seeds: 1 teaspoon

Add-ins

1. Whole Almonds: 24

 

Method

Step 1: Wet Mixture

1. Grind granulated sugar in the food processor in pulse mode. Make sure that half of the sugar is ground to a powder, the rest is various sizes of granules

2. Use Electric mixer. Beat Ghee for one minute

3. Gradually add sugar beating to form light and frothy mixture, about 5 minutes

4. Add Egg and beer. Beat to form a smooth mixture, one minute

Step 2: Dry Mix

Mix all ingredients. Sift

Step 3: Dough

Add one third of flour mix at a time, beating at low speed until it is mixed. Repeat till all the flour has been consumed.

Step 4: Baking

1. Preheat oven to 300º F

2. Line a cookie sheet with Parchment paper

3. Divide dough into 24 parts. Roll each part in to a ball

4. Flatten each ball into a patty about ¼" thick. Press one almond in the center. Put the patty on the parchment paper. Continue till all the balls are done

5. Bake for about 20 minutes until the the cookies start to turn brown

6. Turn of heat and immediately remove cookie sheet to let it cool to room temperature
