Meetha Raita (Sweetened Yogurt and Fruit) RecipeThis dessert is made with natural regular yogurt cream honey saffron and fruits. No cooking is required It is very similar to another dessert called Shrikhand (Shrikhand Recipe). Traditionally, the yogurt is hung in a muslin cloth for about two hours to make Meetha Raita, while it is hung for about 12 hours to make Shrikhand. I have chosen to mix yogurt with sour cream to achieve same or even better results. Fresh ripened fruits in the season are added (Phalsa, Guava, Banana, Pears, Papaya, Grapes, Cherries). You can use any fruits of your choice.
The process involves 4 steps 1. Prepare saffron 2. Prepare yogurt mixture with saffron. Chill in the refrigerator for 2 to 4 hours. At the same time prepare fruits and chill them in a separate bowl. 3. Use electric blender to whip the chilled yogurt mixture. The mixture will get slightly thicker due to protein in the yogurt and acid in the orange juice. Stir in the chilled fruits and peppermint. 4. Chill the prepared dish for two hours so that all the flavors have blended in.
IngredientsSaffron Mix1. Saffron: ½ teaspoon 2. Regular Milk: 2 Tablespoon Yogurt Mix1. Regular Milk Yogurt: 2 Cups 2. Sour Cream: ¾ cup 3. Honey: ¼ Cup 4. Fine grain sea-salt: 1/8 teaspoon 5. Kewra essence (Screwpine essence): 6 drops 6. Fresh juice from one orange Fruits1. Sliced over-ripened Bananas: ½ cup 2. Seed-less grapes: ½ cup 3. Blueberries: ½ cup Frozen blue berries are fine 4. Apples skinned cored and cubed ½": ½ cup 5. Fresh Peppermint leaves Coarsely chopped: 5
MethodStep 1: Prepare Saffron1. Crush saffron with fingers and put in a small microwave dish 2. Add milk to saffron. Microwave for 30 seconds on 'High'. Let it rest for about 10 minutes. Step 2: Chill Yogurt mixture, and fruits separately1. In an electric blender add: Saffron Milk, Sour Cream, Yogurt, Honey, Salt ,Kewra, and Orange juice. Blend for about 30 second so every thing is mixed. Transfer to a mixing bowl Cover with plastic film and chill for two to four hours in the refrigerator 2. Prepare fruits and peppermint. Put in a separate mixing bowl. Cover and chill in the refrigerator Step 3: Prepare final mix1. In electric blender, process chilled yogurt mixture for two minutes. Transfer to serving bowl 2. Stir in the fruits and pepper mint. 3. Return the mixture to refrigerator. Step 4: Service1. Chill in refrigerator for two hour before serving |
